Veggie Lunch Time (VLT)
Stir fry half a pound of broccoli flowers until lightly browned in a non fat pure olive oil spray. Add one sliced zucchini, eggplant and eight or so mushrooms with half a pound of freshly chopped tomato's. Sprinkle fennel seeds, Italian herbs, black pepper and crushed red chilli pepper. When your veggies are al'dente, add a can of drained Goya black beans in to the mix. Once cooked plate over wild rice or top (vegmix) with dry fried sweet potato's.
Feeds three quite comfortably.
