Stir fry half a pound of broccoli flowers until lightly browned in a non fat organic olive oil spray. Add one sliced zucchini, eggplant and eight or so mushrooms in with half a pound of freshly chopped tomato’s. Sprinkle fennel seeds, Italian herbs, black pepper and crushed red chilli pepper. When your veggies are al’dente, add an an 8 oz jar of Wholefoods organic black beans in to the mix. Once cooked plate over wild rice or top your vegmix with dry fried sweet potato’s.
Feeds three quite comfortably.
